"Shijimi Dashimaki Tamago", Fragrant with Shijimi Dashi from Lake Jusan, Aomori

Ou Banquet shijimi dashimaki tamago

Ou Banquet's "Shijimi Dashimaki Tamago" is a luxurious rolled omelet — fluffy egg with the umami of Lake Jusan shijimi clams from Aomori sealed inside.
One bite brings gentle sweetness along with the deep, spreading richness only shijimi dashi can give.

A special dashi from Jusan's "small but tasty" clams

For this dish we use small shijimi raised in Lake Jusan, Aomori.
Unlike the large ones, the meat is small but the umami is concentrated — exceptional when drawn into dashi.

We use these Jusan clams generously, adjusting the heat carefully so no off-flavors appear.
Built on a clear shijimi dashi, the omelet highlights the egg's sweetness while letting you clearly feel the presence of the clams.

Fluffy texture, umami that spreads slowly

We value a fluffy texture that falls apart gently in your mouth — never overcooked, never rolled too tight.
With every bite the shijimi dashi seeps out: lightly salted, yet a deeply satisfying slice.

Gentle enough for children, yet sake lovers often say, "I could drink all night on this dashimaki alone." A connoisseur's dish.

A "quiet feast" that pairs beautifully with sake

The umami of shijimi dashi is a superb match for Tohoku local sake.
With a crisp sake, the finish stays clean while the shijimi's aftertaste lingers quietly.

It resets your palate between fried and richly flavored dishes — a dish that brings balance to the table. We hope you will give it a try.
